Gluten free and dairy free these little pancakes are so quick and easy to whip up! Use pre ground oat flour or step up the health benefits by pulsing your own with sprouted oats. Be sure that oat flour or oats you choose are certified gluten-free. The brand I use is One Degree sprouted rolled oats. They are certified gluten-free and glycophosphate free. I make these about the size of a silver dollar, but I’m sure they would work for larger pancakes as well. When I’m making them for just me and my toddlers this recipe is plenty but if you want bigger pancakes for more people I would double the recipe.
Ingredients:
2 peeled and grated apples
2 eggs
6 tablespoons oat flour
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons sweetener of choice (I like a lacanto monk blend) maple or honey also works just add 1 tablespoon more of oat flour.
Cinnamon to taste I did 1/2 teaspoon
Small sprinkle ground clove optional
Preheat pan to medium low. Lightly grease or spray pan. Spoon 4 small rounds into pan and slightly spread flatter. After 2 minutes or when bottom is lightly browned flip and cook one more minute. Adjust heat if needed as will vary between pan and stove types. Makes about 12-15 small pancakes.
