Apple Pie Quinoa Hit Cereal

Vegan and gluten free oatmeal style hot cereal. This apple pie inspired quinoa will hit the spot for breakfast or any meal for the whole family. While I made for my toddlers I happened to enjoy it just as much as they did!

Ingredients:

1 grated apple with or without peel

1 cup dry quinoa

2 cups water

1/8 cup maple syrup or sweetener of choice

1 tablespoon coconut oil

1 teaspoon vanilla

1/2-2 teaspoons cinnamon to taste

Dash of clove optional

Add all ingredients to pot and bring to boil. Then add lid and reduce heat to medium low and cook about 20 minutes until soft. You can cook slightly less if you like more texture and add 2 more tablespoons water and cook 5-10 minutes more if you like it more mushy like oatmeal. Plate with your favorite toppings like almond butter, coconut cream, more maple syrup or enjoy as is!
