Carrot Cake Oat Bake

vegan / gluten-free / dairy free / sugar-free

To make this certified gluten free be sure to use gluten free oats. I use One Degree sprouted oats. This recipe is sugar-free and not super sweet, but the topping can be sweet. If you want it sweeter feel free to double the sweeteners. 

Ingredients:

2 mashed bananas 

2 cups rolled oats 

2-3 tablespoons nut butter 

2 carrots grated

1 apple peeled and fine chopped 

1/2 cup raisins 

1 cup plant milk or water

1-2 tablespoon maple syrup or honey 

1 teaspoon baking powder 

Small pinch salt

2 teaspoons vanilla 

2 teaspoons cinnamon or pumpkin spice 

1-2 tablespoons monkfruit (optional)

Preheat oven to 350 degrees F. Combine everything in bowl or pan then bake for 45 minutes. I used 8×8 pan. Top with yogurt, nut butter, jam or syrup! I made a quick topping of cashew butter, cashew yogurt, vanilla and stevia to taste!
