1 cup spelt or gluten free cup for cup flour blend
1 cup organic yellow cornmeal
1/3 cup coconut sugar
1/3 cup monk fruit baking blend
1 teaspoon natural salt
3 ½ teaspoons baking powder
⅓ cup grape seed oil
1 large egg
1 cup plant milk
INSTRUCTIONS
Grease a 9 by 13 inch pan, baking dish or cast iron skillet well. Preheat the oven to 400 degrees.
In a medium mixing bowl, add the flour, cornmeal, sweeteners, salt, and baking powder. Blend well.
Next add your oil, plant milk, and egg. Stir gently and lightly. Do not overmix. A few lumps are ok.
Pour the batter into greased pan and bake for 25-30 minutes until the top is a deep golden brown and a toothpick inserted into the center comes out clean. Baking time will depend on size and thickness of pan.
