These began 20 years ago for me as I experimented with healthy recipes. They have evolved to many variations as well! We will call this variation 1 and I will post more to come!
Dates about 10-12
1 cup Pumpkin seeds sprouted salted
1 cup cashew pieces or other nut
1/2 cup virgin coconut oil (no need to melt)
1/3 cup coconut flour, rolled oats or additional nuts (pecan or walnut are a nice flavor)
Vanilla splash optional
Salt dash
2 handfuls raisins or add additional 5-10 dates until desired sweetness
Blend everything in food processor until well chopped. Taste for sweetness level and salt level. It should clump together well and if not add 1-3 tablespoons more coconut oil.
Get 2 piece parchment paper slightly longer than your cookie sheets and press mixture flat between. Place entire cookie sheet inside fridge or freezer until hard. Wait 1 hour and cut with pizza cutter or knife into desired size bars, or pieces. Keep refrigerated or frozen. Can still be eaten frozen and they melt slower.
