Gluten Free Quick Bread

The base flour of this bread is buckwheat which is gluten free and not in the wheat family contrary to its name. Buckwheat is super nutritious and nutrient dense. It aids in weight loss since it is low calorie and high fiber. Buckwheat is also good for managing diabetes, lowering blood pressure and good for heart health. Quick bread is a no fuss easy way to make bread. There’s no yeast so you don’t have to wait for dough to rise. The baking soda and baking powder help it to rise quickly in the oven. Simply stir and bake. I do recommend waiting about 20 minutes for the dry and wet ingredients to mesh before baking when working with gluten free flours.

ingredients :

1 cup buckwheat flour

1/3 cup chickpea flour

1/3 cup arrow root flour

1/3 cup rye flour or you can substitute extra buck wheat or quinoa flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

5 tablespoons water

3 tablespoons flax meal

2 tablespoons honey

1/2 cup coconut milk

1 teaspoon apple cider vinegar

Preheat oven 375°F. Mix all the dry ingredients first then add all the wet ingredients. Let the dough sit for 15 minutes to absorb. Form dough into loaf and bake 35-38 minutes until center comes out clean on tooth pick.
