I needed a quick easy recipe for getting extra nutrients during the day between meals that tasted good. Enter these fabulous protein bars!!! I prefer without chocolate on top for less sugar but hubby loves the chocolate. these are just the right amount of sweet and healthy! Perfect for pregnant and breastfeeding mamas who need a nutrition boost like me!
Ingredients
3 cups rolled oats
4 scoops flavored natural protein powder
12 oz jar smooth nut butter of choice
1/2 cup honey or other sweet syrup like date
1/2 cup maple syrup
1-3 tablespoons plant milk
1 tablespoon coconut oil
1 teaspoon vanilla optional
1/2 cup chocolate chips for melting Optional
Directions
Line a 9 x 13 inch pan with parchment paper. In a large mixing bowl, or stand mixer with cookie dough attachment add your rolled oats with your protein powder. Warm your nut butter with your rest of ingredients except chocolate. Then add mixture to the oats and protein powder. As needed add the plant milk 1 tablespoon at a time to form a thick hard dough. Use hands if needed to get dough uniform. Press dough into the lined pan nice and flat. Melt your chocolate chips and drizzle over the top if desired. Refrigerate for 30 minutes then slice into about 30 bars depending on size you want.
