Perfect paleo or keto bread and great for any diet! Texture and flavor for me are perfection! Hope you enjoy as well!
2 cups almond flour fine ground 1 cup plus 1 tablespoon arrow root powder 1/2 cup coconut flour 1 tablespoon coconut sugar 1 teaspoon sea salt 1/2 teaspoon baking soda 1 1/2 teaspoons baking powder 1 teaspoon apple cider vinegar 4 large eggs 1/4 cup unsweetened nondairy milk 1/4 cup liquid oil of choice
Preheat oven to 350° grease or line bread pan. Mix all of your dry ingredients well in one bowl, in separate bowl mix liquid ingredients. Mix the two together and don’t overmix. Will be a very sticky dough more like cookie dough in firmness than bread dough. Spoon into bread pan, if you need to press down use damp hands or damp spoon. Place on center rack and bake for 30-40 minutes until toothpick comes out clean. Cool in pan on a wire rack for 30 minutes then remove. Do not slice until fully cool store in refrigerator four or five days or freeze leftovers.
What I did was separate 1/4 of dough to make a pizza crust and put the rest in bread pan for a less tall loaf. For pizza crust, garlic bread, or focaccia style bread use a baking sheet or shallow pie pan. Grease with plenty of coconut oil, using damp hands make a 1/2 inch thick circle of dough. Bake 15-20 minutes until golden brown.
