What’s great about these is that they are so healthy, tasty, and easy! Simple whole food ingredients make them a guilt free treat!
1 1/4 cup coconut flour
2/3 cups coconut sugar
1 1/2 cups finely shredded unsweetened coconut
1 cup coconut oil melted but not hot
1/2 cup honey or agave nectar
optial flavor additions: 1/4 cup chopped nuts or mini Enjoy Life chocolate chips, 1 teaspoon vanilla extract, 1 teaspoon chia, 2 tablespoons raw cocoa powder or Maca powder.
Mix and mash everything in a bowl, (it’s normal to be a little crumbly) then use a tablespoon to firmly press each ball and slide out by pressing on one side, then place into storage container. Be gentle with them until they harden. Place them in the freezer or fridge to harden. Keep stored in fridge or freezer. Serve fresh from fridge. Will start to get soft after 30 minutes out of the fridge.
Dough can also be pressed firm into a pie pan to use as a natural gluten free crust, or into brownie pan to be cut into bars. Use wax paper on bottom to make easy to get out of pans.
