Fresh Mango Coconut Parfait DF GF


2 fresh ripe mangoes peeled and cut into large chunks
1 can 14 oz coconut milk (not light)
1/2 teaspoon vanilla
5 mint leaves to blend and more to garnish (mint is optional)

You can add a little sweetener if you like but I like the natural sweetness as is. Sprinkle with chili powder on top if desired. on topSelect smoothie function. Stop as soon as it looks well blended. Chill coconut milk in fridge before hand or chill the parfait after blended. Best served chilled but I like it room temp as well. Garnish with extra mint leaves if desired.
