These vegan potato bites have that perfect crisp outer shell and soft inside! So much healthier than fried potatoes and much easier to make and clean up than frying!
Ingredients:
2 large potatoes peeled and diced
1-2 tablespoons olive oil
1 teaspoon salt more or less to taste
1/2 teaspoon nutritional yeast optional
Dash of pepper, paprika, garlic powder, and onion powder
Directions: peel and chop potatoes into small 1/2 inch cubes. In mixing bowl evenly coat or spray with olive oil. Then stir in spices salt and pepper. Cook in air fryer at 390 degrees for 20 minutes. Stir halfway thru spray with more olive oil and adjust salt if necessary.
Serve by themselves or with a yummy dip! I mixed equal parts vegan Mayo, ketchup and hot sauce.
