Fresh Vegan Detox Salad GF DF

This is my all time favorite healthy meal!! My husband and I love to sit and chop everything together and then we eat the whole thing until we are bursting!! This a is plant based raw meal that you don’t have to feel guilty indulging in. Gluten free, dairy free, soy free, and vegan. The limes, herbs and fresh produce help detox impurities from the body.

Ingredients:
​two tomatoes 
1 or 2 avocado 
1 onion finely diced
2 English cucumbers
1 cup of sweet corn 
1 Mild pepper of choice like green bell or cubanelle pepper
half or whole cup fresh herbs of choice (cilantro and/or basil)
2 small limes 
half cup olive oil or hemp seed oil 
2 teaspoons black pepper 
2 teaspoons salt
1 teaspoon chili powder or paprika 
1-3 clove garlic press or finely chopped 

Optional add 2 small cooked chopped beets, 1 fine chopped jalapeño no seeds, kelp seasoning, and 1-2 tablespoons sesame oil I also prefer to double the limes.

Chop veggies, juice limes, and mix all ingredients in one bowl and serve. 5-8 servings. Fills my 15 cup Tupperware almost to top. Ready to serve and store the rest in fridge.
